This sacred recipe, traditionally prepared as an offering for the revered Lord Venkateswara, an enchanting avatar of Lord Vishnu, holds a special place in the hearts of devotees. But its allure extends beyond the spiritual realm, for this celestial dish also graces the auspicious Dasara Navaratri celebrations, where it is lovingly presented to the resplendent Goddess Durga herself.

Ingredients for Thayir Saadam

  • 1 cup cooked rice (preferably short-grain rice)
  • 1 cup plain yogurt (curd)
  • 1/4 cup milk
  • 1/4 cup grated carrot
  • 2 tablespoons finely chopped cucumber
  • 2 tablespoons chopped cilantro (coriander leaves)
  • 1 green chili, finely chopped (optional)
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 2 tablespoons oil (preferably vegetable oil or ghee)
  • Salt to taste

The Tempering Process Needs

  • 1 tablespoon oil (preferably vegetable oil or ghee)
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal (split black gram)
  • 1/2 teaspoon chana dal (split Bengal gram)
  • A few curry leaves

How to Make the Best Thayir Saadam

  1. In a large bowl, mash the cooked rice using the back of a spoon or a potato masher. You can keep the rice slightly grainy or mash it to your desired consistency.

  2. In a separate bowl, whisk the plain yogurt until smooth. Add milk to the yogurt and mix well.

  3. Add the yogurt mixture to the mashed rice and mix thoroughly to combine. Make sure the rice is well coated with the yogurt.

  4. Heat 2 tablespoons of oil in a small pan over medium heat. Add mustard seeds and let them splutter. Then, add cumin seeds, asafoetida, grated ginger, and chopped green chili (if using). Sauté for a minute until the flavors are released.

  5. Pour the tempering mixture onto the rice and yogurt mixture. Mix well to incorporate the flavors.

  6. Add grated carrot, chopped cucumber, and chopped cilantro to the rice mixture. Mix everything together until well combined.

  7. Taste the curd rice and add salt as per your preference. Adjust the consistency by adding more yogurt or milk if needed.

  8. In another small pan, heat 1 tablespoon of oil for tempering. Add mustard seeds and let them splutter. Then, add urad dal and chana dal. Sauté until the dals turn golden brown. Finally, add curry leaves and sauté for a few seconds.

  9. Pour the tempering mixture over the curd rice and gently mix it in.

  10. Your homemade-style Thayir Saadam (curd rice) is ready to be served! It can be enjoyed warm or chilled.

  11. Thayir Saadam is a versatile dish and can be served as is or with some pickle, papadum, or any side dish of your choice. It is a comforting and cooling dish, perfect for a hearty home-cooked meal. Enjoy!
